This summer you can try some sausages that are a little different from what you normally spot in supermarkets, with Silver Hill Fisch specialising in making their own unique seafood sausages!

Based in the picturesque Huon Valley in Cygnet, Silver Hill Fisch was founded in 2010 by Maja Veit, who worked at various outlets around Hobart in the seafood industry.

Holding over ten years of experience in helping her parents with their Silver Hill Bratwurst stall at the Salamanca Markets and based on customer feedback, Maja created a seafood sausage which won a silver medal at the 2010 Fine Food Awards.

The seafood sausages, made "solely" from whole Tasmanian ingredients that are preservative and gluten free, then went on to win the Best New Entry at the 2011 Taste Festival.

There are currently five varieties of seafood sausages available including myrtle salmon (the original Silver Hill Fisch salmon sausage), dill ocean trout, cajun ocean trout, wasabi salmon and chilli salmon.

There is also one smoked seafood pate available, the salmon pate, perfect as a dip or as a spread on crackers.

You can try the Silver Hill Fisch seafood sausages yourself at the Taste Festival from December 28 to January 3 or the Cygnet Folk Festival from January 11 to 13.

Take a refreshing break from the sweltering heat this summer, by seeking some rejuvenating beverages at the Richmond Tasting House.

Located in the heart of Richmond Village in southern Tasmania, the tasting house offers local produce, whiskies and a selection of the island's signature cool-climate wines.

Pick up fruit liqueurs and wines, vodka, rum and brandy, fudges, honey and more foods and beverages made on the island.

Take the opportunity to also go on a full-day Coal River Valley Wine Tour!

Beginning at 10:00, guests  will visit at least four cellar doors with lunch also included at a vineyard or one of Richmond's fantastic eateries.

Along with numerous wine tastings, you can also expect to have a nibble on a selection of Tasmanian cheeses to compliment your chosen beverage.

A number of free tastings will also take place during the festive season, from 12:00 to 15:00 outside the Richmond Tasting House.

Visitors will be able to try award-winning boutique wines from Bream Creek Vineyard, artisan cheeses from new manufacturer Red Cow Dairy and a sip of whisky, gin and vodka from McHenry & Sons Distillery on December 27.

Have you always wanted to try your hand at fly fishing? Then get to learning the ropes with Rod and Fly Tasmania.

Take a fantastic tour with experienced trout fishing guide Mike Tenner, testing your fly fishing skills in trying to hook some of the island's trout and salmon.

Mike has been teaching the art of fly fishing and holding trout fishing tours in Tasmania for over 30 years, so you can learn from the best, as he passes some of his lifetime experience and skills onto you.

Trout and fly fishing classes take place on the island's capital of Hobart, where beginners are also welcome to join in with the Introduction to Fly Fishing lesson.

This all-day, single fishing class begins at 09:00, with participants practicing land casting and then spending the rest of the lesson applying the techniques learnt on the water until 17:00.

In this introductory class you'll take on board a number of skills including fly casting, fly choice and entomology, knot tying, catch and release techniques, have an equipment overview and learn about safety.

Mike will also share with you the fundamentals of rods, line and reels, different parts of trout streams, reading the water (where trout is hiding), what trout eat and what fly to use, on the water strategies and much more!

A private trout fishery, set in the beautiful Huon Valley, offers prime trout fishing for beginners and those who hold some experience.

Rainbow and brown trout swim the waters, with the fish varying in size from one to over four kg!

If you've already got some fly fishing experience behind you, then you can opt for a brilliant two or three day experience with Rod and Fly Tasmania.

Summer at the Royal Tasmanian Botanical Gardens has never been better with a selection of events and activities to keep guests entertained during their visit.

Located on the Queens Domain, the gardens are just a short two kilometre walk from Hobart's CBD, housing a number of attractions including a Japanese garden, the subantarctic plant house, the French memorial garden and fountain, the rain garden and Fuchsia House.

If you're a fan of classic works such as Romeo and Juliet, A Midsummer Night's Dream, Hamlet, Much Ado About Nothing and The Merchant of Venice, then take a day out this summer for the Shakespeare Garden Tour.

This unique experience will have visitors taking a walking tour of the gardens, discovering plants that were included in the English poet and playwright's "works, life and times".

About a third of the gardens is covered in the 70 minute tour, running on January 5, February 2 and March 2 at 10:00, with entry $8.

The gardens is also getting ready for some swashbuckling fun this summer with performances of the famous adventure novel by Robert Louis-Stevenson, Treasure Island!

Treat the kids to a day at the gardens as Long John Silver is joined by his band of bumbling pirates to find Captain Flint's treasure, in what is bound to be an adventure of "madness, mayhem and merriment".

The play will be held in various locations within the botanical gardens, where you can expect to have a barrel of laughs with the kids and join in with the catchy songs from the show.

Tickets are available from Centertainment, with children (aged 4-14) $10, adults $20 and concession $10. A 10 per cent discount is also available for groups of ten or more (aged 4 years and over).

A group of Tasmanians have banded together to establish the Tassievore Eat Local Challenge, a six-month initiative that will see the group increasing the consumption of locally produced food to achieve their vision for a "happy, healthy, sustainable and prosperous Tasmania".

The challenge was coordinated by Sustainable Living Tasmania and was officially launched in the Totally Tassie Picnic at the Sustainable Living Festival in November.

The "Tassivores" said there were several ways in which people could approach the challenge with some eating almost exclusively Tasmanian food for the length of the challenge while others are opting for one day of the week to be dedicated to local food.

The group is simply looking at people to challenge themselves to "do more" to support the island's producers, farmers and businesses and to "live locally".

The Mercury reported that a new tasting trail was launched by the Tassivore Eat Local Challenge, featuring eight of the island's best eateries.

Included in the trail are Tracks Cafe, the Royal Tasmanian Botanical Gardens Restaurant, TASTE, Tricycle, Smolt, Castray Esplanade Food and Wine, Citrus Moon and Picnic Basket.

Hobart's famous Farm Gate Market will also showcase at least one Tassievore dish from the start of January to the end of April.

So what exactly is a Tassievore dish? This is a meal that is "totally Tasmanian" – with a few exceptions for minor ingredients such as raising agents and spices – with updates on dishes on offer posted on the Tassievore Twitter and Facebook pages.

There's no better time to make a visit to Bridestowe Lavender Estate than December and January, with lavenders reaching their full splendor in these months.

If you're planning on making a trip to Tasmania these festive holidays, make sure to stop by the town of Nabowla, located a few kilometres north east of Launceston, to see these beautiful flowering plants in their prime.

The collection of dried flowers begins mid December, with harvesting for oil production and distillation beginning in January.

The site was established 90 years ago and is said to be the largest lavender plantation in the southern hemisphere.

Self-guided tours are available all year round, with guided tours for groups available by appointment. On a visit to the estate, guests are shown a fantastic audio-visual presentation detailing the site's remarkable history, as well as giving insight into the harvesting and distillation processes.

Spend a summer's day strolling through the magnificent fields, taking cover underneath the two massive Oak trees planted over a hundred years ago or finding brilliant spots in the estate to set up your picnic lunch. For those with less mobility, there is also now a bus tour out into the fields!

If you want a dining experience, pop into the estate's Woodcroft Cafe to enjoy unique, "lavender-inspired" cuisine.

Signature dishes include braised lamb shanks with herb de provence and chicken with mustard and lavender sauce.

You can also opt for a selection of light refreshments, with the Woodcroft Cafe also offering espresso coffee and a range of Bridestowe gourmet teas.

New products for December include rhubarb and lavender syrup to drizzle over ice creams, a trio of tiny teddy soaps to add to Christmas stockings and a morning farmhouse candle to fill your home with the wonderful lavender aroma.

Other products include the Bridestowe heat bear, the perfect gift for kids, culinary lavender to use in making cakes, desserts, chocolate and savoury foods, bath and body packs, candles and of course lavender oils.

Are you staying in Launceston for the festive holidays? Then make sure to rise bright and early on Saturday morning for the weekly Harvest Market!

Make your way to foodie heaven to sample some of Tasmania's finest produce including fresh fruit and vegetables, nuts and olives, pastries, breads and other delicious baked goods, jams, honeys and chutneys, meats, dairy and a selection of the island's famous cool-climate wines.

The market runs every Saturday morning from 08:30 to 12:30 at the Cimitiere Street car park (opposite the Grand Chancellor hotel), where you can be sure to find a delightful treat for breakfast and some local goodies to take home with you.

It's not only food on display at the market though with stalls also displaying flowers, plants, herbs, seedlings and other products to meet your gardening needs.

If you love everything dairy make sure to try some of Meander Valley Dairy's produce! Use a dollop of their double cream in a delicious berry fruit salad or to help create a scrumptious vanilla panna cotta.

You can also use their creme fraiche to drizzle over a decadent chocolate cake or scoop a dollop onto a fresh baked fish – add a lemon drizzle and you will be in heaven!

Spaces are filling up fast for the fantastic food adventures at The Agrarian Kitchen in New Norfolk.

The sustainable farm-based cooking school is located just 45 minutes from Hobart, nestled in the Derwent Valley.

The Agrarian Kitchen is laid out across five acres incorporating a working farm, orchard, extensive vegetable garden, berry patch and herb garden – all grown using "organic principles".

You can also count a number of animals among The Agrarian Kitchen's residents including two British Alpine goats, Barnevelder chickens, Wessex saddleback pigs and a flock of geese!

Visitors can take part in a unique cooking classes led by former food editor of Australian Gourmet Traveller magazine Rodney Dunn, where you can explore the gardens to pick fresh fruits and vegetables to prepare your meals.

The Agrarian Experience is the most notable food journey, with participants kicking off the day by sourcing their ripe picks from the gardens and off local farmers and producers.

Once done harvesting, you will head to the kitchen to prepare and cook a "seasonal feast", with a special Alan Scott-designed wood-fired oven to enhance your culinary experience.

This fantastic all-day experience (09:00 to 16:30) will finish with a delectable lunch complimented by premium Tasmanian wines and artisanal ales.

Some tasty dishes from previous Agrarian Experience menus include poached wagyu beef brisket with coriander and horseradish relish, fried artichokes, braised baby leeks and spinach with hollandaise sauce and the mouth-watering dessert finale, rhubarb mille feuille with rhubarb sorbet.

Places for The Agrarian Experience are almost sold out for the month of December, with January spots also going quick – so grab some friends and get your experience booked in for the summer season.

The kids can also get in on some paddock-to-the-plate fun with The Little Agrarian experience for children aged six to 11.

They'll be given the opportunity to "see, smell, touch and taste" their way around the gardens, farm and kitchen, learning where their food comes from and how it lands onto their plates!
A number of fun activities will be included such as collecting chicken eggs, milking the British alpine goats and feeding the Wessex saddleback piglets.

Port Arthur is a small town that is of great significance to Australia's past, holding one of the country's most important heritage sites.

The Port Arthur Historic Site is Tasmania's most visited attraction, with the site a former convict settlement from the 1800s.

There are a number of exciting and informative things to see, with guided tours around the Coal Mines Historic Site, the penitentiary, dockyard, convict church, museum houses and grounds and gardens.

You can opt for the more unique experiences of Port Arthur by heading out on the paranormal investigation in the dead of the night, the lantern-lit ghost tour or visit the first reformatory built for juvenile male convicts in the British Empire, Point Puer Boys' Prison, renowned for its harsh punishment and discipline.

The summer season also ushers in a number of special activities at the Port Arthur Historic Site, starting with Carols by Candlelight on December 23. Take part in traditional carol singing at Port Arthur's convict church from 20:30 in the lead up to Christmas Day.

The site will also play host to the Boxing Day Woodchops, one of Australia's "longest running sports carnivals", beginning at 10:00 and also featuring traditional sports activities for the kids and stalls.

You can get a taste for the "finer things in life" by enjoying High Tea at the Visiting Magistrates House, running daily from December 30 to January 31.

Take a bite out of handmade petit fours, gourmet sandwiches and freshly baked scones lathered with jam and cream, in this lovely afternoon activity at the beautifully restored Visiting Magistrates House.

Bring the family along to Port Arthur from December 27 to January 26 for some daily historic plays or to try their hand at some traditional trades such as stone masonry and bricklaying from January 6 to 20.
